By Liz Tran Serious spring rolls — be sure you got that lid on when they start to fry!!Makes about 15-20 spring rolls
- 1 pkg egg roll wrappers
- 1 white onion
- 1 small bag of cole slaw mix (if feeling lazy)
- 1 package of glass noodles, they are clear rice noodles
- 1 package of dried shitake shroomies (at the asian store they are simply called dried black fungus - embrace it. you can just soak these in water for 10 min)
- 1 lb ground pork or if you like chicken or beef or turkey use any of those
- 2 tsp black pepper
- 1/2 clove garlic, minced
- 2 tsp rice vinegar
- 2 tps sesame oil
- 1 egg
- 1 tsp salt
Optional: 2 tsp oyster sauce, 1 tsp fish sauce
Prep:
- boil glass noodles, drain, then cut about 1/2 pkg into 1 inch strands
- dice onions, garlic
- soak shroomies
- separate spring roll wrappers. I usually do 1 full and 1 half sheet per spring roll .-peel gently, they rip easily.
- break single egg and whisk in a small bowl — this is used as paste to seal the springrolls shut when you roll
Construct!
- put the meat into a large bowl. mix in all ingredients except for the egg. put in glass noodles and shroomies a little bit at a time. You don’t want to use all of it. Your mix should be like 75% meat, 5% shroomies, 10% noodles, 5% veggies. If the mix looks like it needs a little color, add a bit more oyster sauce.
- Take a full egg roll sheet and lay it like a diamond in front of you. Then take the half sheet and lay it across the middle from side to side
- put about 3 tsp of seasoned innards longways across the middle
- you want to start rolling from the bottom up, then sides, the top and roll it very, very tightly
- right before the top, dab two fingers of egg at the end to seal the roll
- I usually roll them all first, then fry them all
Fryyyyya
-Fry at the heat level where they show you an egg roll (or the highest heat)
- fry until a light golden brown & the egg rolls are floating
You can garnish with lettuce & cucumbers.
